Prosciutto & Peas Pasta - A Family Fave!
⅓ cup unsalted butter for pan
1 package prosciutto, sliced into ribbons
⅓ cup AP flour
2 cups 35% cream
Milk as required
1 cup (more or less as desired) frozen peas
Splash of lemon juice to brighten
Over medium/high heat melt butter in a deep sauté pan.
Plop the prosciutto in and stirring often sauté until deeply golden brown.
Sprinkle in flour stirring constantly for about 2 or so minutes.
Pour the cream over and stir until well combined and gently bubbling. It will get quite thick at this point so add milk as necessary to desired consistency.
Add lots of freshly ground pepper and a small splash of lemon juice to brighten all the flavours.
Toss with cooked pasta and serve immediately!
